Baked Oatmeal

There are so many great ways to use oatmeal in sweet and savory dishes, I just can’t get enough! For a while I have been looking for a good baked oatmeal recipe to make ahead and re-heat by the square for breakfasts during the week. But for some reason every recipe is on for a small 8×8 dish instead of the larger 13×9! So I decided to try and make my own recipe in the larger pan. I am very happy with the way the recipe turned out and I can make several different varieties by only changing two ingredients. If you are looking for a chewy oatmeal bar, this is not the recipe for you. This tastes just like a bowl of oatmeal. Yuuuummmm!

Baked Oatmeal

Ingredients:

  • 1/2 cup brown sugar
  • 2 teaspoon baking powder
  • 2  teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3 cups old fashioned rolled oats
  • 1/3 cup walnut pieces, chopped
  • 1 cup chopped strawberries
  • 2 cups milk
  • 2  large egg
  • ¼ c butter, melted
  • ½ c applesauce
  • 2 teaspoons vanilla extract

 

Directions:·

  • Preheat oven to 350°F and spray the inside of 13×9 inch baking dish with cooking spray.
  • In a large bowl, mix together  brown sugar, baking powder, cinnamon and salt. Add oatmeal and walnut. Stir with a wire whisk, this makes it easier to incorporate all the ingredients.
  • Stir in strawberry chunks. Pour mixture into the prepared pan and make sure the strawberry chunks are evenly distributed.
  • In the large bowl, whisk together the milk, egg, butter and vanilla extract. Stir in applesauce.
  • Pour the milk mixture into the pan over the oats carefully. Gently rock the pan back and forth and shake a little to make sure that the milk mixture coats all the oats. Let the pan sit for a few minutes & allow the milk to settle.
  • Bake 25 – 30 minutes or until the top is golden brown and the milk mixture has set.
  • Once baked cut into squares and served warm. The remaining oatmeal can be stored, covered in the refrigerator.

I made this with walnuts and strawberries because I like that combination. However, you can customize this dish to your taste. Instead of walnuts you can add chocolate chips, raisins, dried cranberries or maybe another nut like almonds or pecans. Instead of strawberries you can add bananas, peaches or blueberries. It really is up to you and your preference. Try something new!

 

I think maybe next time I might try chocolate chips and bananas or maybe pecans and peaches. What will you try?
