Chocolate Chip Bundt Cake

When I worked in an office years ago we would have potlucks for holidays, birthdays or other special events and I was always asked to make the same thing – Chocolate Chip Bundt Cake. I found this recipe so long ago that I can’t even remember where I it came from. It’s a thick cake that is rich and sweet and oh so yummy!

Chocolate Chip Bundt Cake

Ingredients:

  • 1 box dark chocolate cake mix
  • 1/2 c. vegetable oil
  • 1 c. sour cream
  • 1 small box of instant chocolate pudding mix
  • 1/2 c. warm water
  • 4 eggs
  • 12 oz. chocolate chips (also can use health chips, peanut butter chips, etc. )

Directions:

1. Preheat oven to 350 degrees. Grease and flour a bundt pan

2. Mix all ingredients, except eggs and chocolate chips. The mixture does not have to be smooth, just mixed well.

3. Add eggs, one at a time, beating well after each addition. Stir in chocolate chips.

4. Bake for 1 hour and then cool for 10 minutes in the pan.  Turn the pan upside down and tap the sides until the cake comes out. Cool completely on a wire rack before frosting.

5. Sprinkle with confectioners’ sugar or cover with dark chocolate frosting.

Do not refrigerate. Serves 10 to 12.

One more note about this recipe, I have tried to use it to make 2 round cakes but the cake is so heavy that the top layer just slipped off and it was  a mess! You could probably use a 13×9 but would need to reduce the time, not sure by how much. But if you do try it, let me know!
