Easy Breakfast Muffins

Fruit muffins are something that I’ve been making for over 10 years. My kids love to eat them for breakfast with milk or juice. Over the years we’ve tried different fruits – blueberries, strawberries, apples. Each one of my kids has a favorite!

This recipe makes a dozen muffins and they keep well in the fridge. You don’t need to use an electric mixer, everything can be stirred by hand if you like. You can use this recipe as a base for whatever variety of muffins you and your family like. Instead of fruit, you can also use nuts or chocolate chips!

Ingredients:

  • 1/2 c milk
  • 1 egg
  • 1/3 c butter, melted
  • 1/2 c white sugar
  • 1/4 c brown sugar
  • 1 tsp vanilla
  • 1 1/2 all purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 c diced fruit of choice: blueberries, apples, strawberries, peaches

Directions:

  • Heat oven to 375 degrees and grease or line a 12 muffin tin.
  • Beat milk, egg, butter, sugars, and vanilla slightly with a whisk.
  • Add dry ingredients and mix until well combined.
  • Stir in diced fruit.
  • Divide batter evenly between the 12 muffins. They may look full because of the fruit, but once the fruit bakes the fruit will reduce in size.
  • Bake for 25 minutes or until a toothpick comes out clean when inserted into the center.
  • Yields 12 muffins
