Homemade Honey Granola

Granola is something that I have loved to eat for years. I usually find a mix I like at the market with almonds and raisins or cranberries and walnuts. There are so many different varieties, sometimes it’s hard to choose! My kids have never had an interest in my granola, until one day when we were spending the day at a museum and my son ordered a parfait for lunch. I was pleasantly surprised that he loved it! We started making them at home but my kids didn’t like the granola with “all the stuff” in it. So, I made this very simple and basic granola just for them to add to their parfaits instead.


Ingredients:

  • 2 cups old-fashioned oats
  • 1/4 cup coconut oil
  • 1/3 cup honey
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1 Tbsp ground flaxseed (optional)

Directions:

Preheat the oven to 300 degrees and line a baking sheet with foil or parchment paper. Don’t use a silicone mat. I’ve tried it and it doesn’t turn out as crunchy!

Combine all ingredients in a bowl until all of the ingredients are mixed thoroughly.

Next, spread the mixture evenly on your prepared pan.

Bake for 10 minutes, then remove the pan and stir up the mixture. Bake for another 10 minutes, or until golden brown. Remove from the oven and allow the granola to cool completely before scooping it into your containers.

A few things, be sure to use old-fashioned oats. Quick oats will not turn out the same! I included flaxseed in the recipe to add omega-3 fats and fiber. It’s optional and won’t change the flavor if you leave it out. Lastly, if you mix in additional ingredients, you can add nuts before cooking but add any dried fruit after the granola is already baked.
