Oatmeal & Greek Yogurt Pancakes

Let’s talk pancakes. Every Saturday morning making pancakes has been a tradition for us. I can’t remember when it started but it’s been going on for a while now! I’ve been using the same basic recipe for a long time, but wanted to change it up and try something new. I made oatmeal pancakes by basically swapping oats for flour and these did not go over well. The kids hated the texture. I mean, HATED the texture. I didn’t mind it and thought they were okay.

This time I ground the oats in a food processor to make the texture smoother like a traditional pancake, however they don’t taste exactly like a traditional pancake. They are light and fluffy, but not bready. Does that make sense? I also added Greek yogurt to give the cakes some added protein and probiotic power.

Oatmeal and Greek Yogurt Pancakes

Ingredients:

  • 2 c oatmeal flour (ground oatmeal)
  • 1/2  tsp salt
  • 1 1/2 tsp baking powder
  • 1 tbsp sugar (or equivalent sugar substitute, I used 1 1/4 tsp of Truvia)
  • 2 eggs
  • 1/4 c melted butter
  • 1 c Greek yogurt
  • 1 c milk of choice (I used almond milk)

 Directions: 

Place oatmeal in a food processors until it forms a powder, I used old fashion oats. Once you have 2 cups of oatmeal flour, pour it in a bowl and add salt, baking powder and sugar.

Next, add remaining ingredients one by one and stir with a whisk until smooth. Let the mixture sit for 5 minutes before cooking the cakes in a pan or on a griddle. I use a measuring cup with a spout to make it easier to pour my batter.

You can eat these cakes with syrup, jam, or just fresh fruit! I always have a bag of frozen berries in my freezer, so I will put a cup or two in a bowl and sprinkle with sugar (or Truvia) and let them sit in the fridge over night. The next morning the fruit will be defrosted and there will be a nice, sweet syrup to pour over your pancakes too.

If you forget to take the berries out the night before, you can also defrost them in the microwave then sprinkle them with sugar (or Truvia) in the morning. By the time you are done cooking the pancakes, they should be ready to eat with your pancakes!
