Pepperoni Pizza Bake

My family and I have had pizza night every Friday for the past 2 years. At first we would order delivery, but over time I wanted to try making my own pizza. I’ve posted several recipes here and still look for new ways to make our family tradition special. My latest recipe was a huge success! I found this recipe on the Pillsbury website and only one change by making my own sauce.
Pepperoni Pizza Bake

Ingredients

  • 1 can (16.3 oz) Pillsbury™ Grands!™ Homestyle biscuits
  • 1 c crushed tomatoes
  • 1/2 tsp basil
  • 1/4 tsp oregano
  • 1/4 tsp garlic powder
  • 2 cups finely shredded mozzarella cheese or Italian blend cheese
  • sliced pepperoni

Directions:

Mix the crushed tomatoes and spices in a large bowl, then stir in 1 cup of the cheese.

Cut each biscuit into 8 pieces.

Toss the biscuit pieces in the sauce and cheese mixture.

Lightly spray a 13×9″ pan with non-stick cooking spray, then spread the mixture in the pan.

Add a layer of pepperoni, then the remaining cup of cheese and a bit more pepperoni slices.

Bake at 375°F for 20 minutes or until golden brown and bubbly. You can use a toothpick to check if the biscuits are cooked all the way through.

This pizza bake turned out amazing! I was concerned that the small amount of sauce would make it dry, but it was just the right amount to add flavor without making the biscuits soggy. Another bonus is how fast it was to prepare, the total prep time was about 20 minutes.
So far we’ve only make this with pepperoni because that’s our kids’ favorite. But I want to try it with other toppings like olives, onions or peppers. What topping would you add?
