Skillet Vegetable Fritatta

In the past I used canola oil and margarine, but over the last 6 months I’ve made an effort to eat better and try to make my food choices more natural instead of processed. Olive oil has no cholesterol, sodium or trans-fat. Plus, it makes everything tasted delicious! Naturally, when I was introduced to Star Butter Flavored Olive Oil I was curious. Can I really have the butter flavor, even with baking, and have all of the great health benefits of olive oil? Well, this Skillet Vegetable Frittata is my first try and I can happily say it was a success!

Ingredients:

  • 2 tbsp Star Butter Flavored Olive Oil
  • 2 zucchini, sliced
  • 1/4 of a medium red onion, sliced
  • 1 cup grape tomatoes
  • 1 tbsp minced garlic
  • 1 cup spinach, rough chopped
  • 1 tbsp oregano
  • 1 cup shredded Parmesan cheese (more for garnish)
  • 8 eggs

Direction: Preheat oven to 375 degrees. Heat 1 tbsp of Star Butter Flavored Olive Oil in an oven safe skillet on medium-high heat.

  Saute zucchini for 2-3 minutes, then add onion, tomatoes, and garlic and cook for another 3-4 minutes.

Add spinach and cook until the spinach is wilted. Meanwhile, whisk eggs and then stir in oregano and Parmesan cheese.

Add 1 tbsp of Star Butter Flavored Olive Oil to the veggies, then pour the eggs into the skillet and cook on the stove top on medium heat until the edges are set.

Finish cooking the frittata in the oven for 10-12 minutes until the egg is fully cooked. Serve with extra cheese sprinkled on top.

Doesn’t it look lovely? Well, I can tell you it tastes even better than it looks! You can taste the butter flavor and it doesn’t taste artificial. Often when baking I substitute melted butter for the vegetable oil that the recipe calls for but now I don’t have to! I can’t wait to use this Star Butter Flavored Olive Oil in all sorts of delicious recipes!
