Spiced Applesauce and Oatmeal Muffins
During Fall I find so many pumpkin recipes, desserts, and treats but my heart belongs to apples! One of my favorite dishes that I have been making for years is a Custard Style Apple Tart. I found the recipe when I was a teenager and have been making it for my family ever since. There are so many different types of apples, all with unique flavors and uses for cooking and baking. I started making homemade applesauce when my daughter was a baby and my kids love it. I used my homemade applesauce in today’s recipe for Spiced Applesauce and Oatmeal Muffins.
Sometimes I like to use a square muffin pan just to change things up a little bit. But I have made the recipe with a standard muffin pan too so I know that works just fine.
This recipe calls for Old Fashioned Oats, be sure not to substitute with Quick Oats. I took a picture of both so that you can see the difference. It does change the way to muffins will turn out!
These muffins are not light and fluffy, they are dense and filling! They make great snacks in between meals, you can also have a few for breakfast on the go. If you like nuts, add a 1/2 cup of chopped walnuts. They taste great with the spices in this recipe!
Spiced Applesauce and Oatmeal Muffins
Ingredients
- 2 cups all-purpose flour
- 1 cups old fashion oats
- 1/4 tsp salt
- 1 tsp cinnamon
- 1/2 tsp allspice
- 1/2 tsp nutmeg
- 1/4 tsp ginger
- 1/2 tsp vanilla extract
- 2 tsp baking powder
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 3/4 cup butter melted
- 2 eggs
- 1 1/4 cup applesauce
Instructions
- Preheat oven to 350 degrees and grease muffin pan.
- Mix your dry ingredients in a bowl.
- Then mix your wet ingredients in a separate bowl and combine with the dry ingredients.
- Next, fill your muffin tins 3/4 of the way full and bake 18-20 minutes.
