Spiced Applesauce Breakfast Cake

One of the things I love about Fall is baking. I love it when the house is filled with the lovely scent of cinnamon, nutmeg and apples. I have been waiting to make this breakfast cake since Fall began, but the temperatures here have been in the triple digits! This week the heat has finally subsided so I was able to bake! I usually make this recipe as a loaf, but this time I adjusted the recipe to make it as a cake and it seems to work much better. I sliced it into bars and ate a piece for breakfast with my coffee. Enjoy!

Spiced Applesauce Breakfast Cake

Ingredients

  • ½ c brown sugar
  • 1 c white sugar
  • ¼ c butter or margarine, softened
  • 1 ½ cups unsweetened applesauce
  • 1 egg
  • 1 tsp vanilla extract
  • 2 c all-purpose flour
  • 2 tsp baking soda
  • ½ tsp ground cinnamon
  • ¼ tsp ground cloves
  • ¼ tsp ground nutmeg
  • ½ tsp salt
  • 1 c raisins
  • ½ c chopped walnuts (optional)

Directions

  1. In a mixing bowl, cream butter and sugars together. Add applesauce, egg and vanilla and mix well.
  2. In a separate bowl combine flour, baking soda, cinnamon, cloves, nutmeg and salt.
  3. Add to applesauce mixture; mix well. Stir in the raisins and walnuts.
  4. Pour into a 13 x 9 pan. Bake at 350 degrees F for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before serving.

    Even though it’s spring now, this still looks delicious and a perfect breakfast treat! I, too, love breakfast!
