Meal Planning: Spinach and Sausage Lasagna

My goal this year is organize my life and one area that needs organization so much is meal planning! I don’t like to cook very much so I don’t want to spend much time on grocery shopping or looking for recipes. After some searching I found a service called eMeals, and it was almost like a dream come true. Not only do they send you recipes each week, but they also send a grocery list with it! This really did sound like the perfect program for me.

eMeals offers 13 different lifestyle meal plans to choose from including Clean Eating, Paleo, Low Fat, Low Carb, Natural & Organic, Portion Control, Gluten Free, Classic Meals, Slow Cooker, Mediterranean,  Simple Gourmet, Low Calorie and Vegetarian meal plans. I chose the Low Fat plan because my husband and I could both benefit from losing a few pounds, even though he would tell you that he’s in “perfect” shape. You can also add on a breakfast, lunch, and/or dessert menu! Each plan gives you the option of a 12-month, 6-month, or 3-month subscription for weekly dinner menus. You could choose one type of meal plan for 3 months, then switch it up with another plan for the next few months! 

I’ve been using the eMeals plans for almost a month and can honestly say, I’m hooked. The meals have been easy to make, no crazy ingredients or complicated instructions. Oh, and they taste good too! In fact, I’m going to share with you one of the meals I made. It was a Sausage Lasagna that I added spinach to. Delicious!

Spinach and Sausage Lasagna

Ingredients:

  • 12 oz reduced fat ground sausage
  • 2 large eggs, beaten
  • 16 oz cottage cheese
  • 1/2 cup shredded Parmesan cheese
  • 10 oz package of spinach
  • 24 oz jar spaghetti sauce (or homemade sauce)
  • 6 pieces of no-boil lasagna noodles
  • 8 oz part-skim shredded mozzarella

Directions:

Cook sausage in a large skillet until browned and crumble, drain grease and set aside. In a large bowl, combine eggs, cottage cheese and 1/4 c Parmesan cheese. Cook spinach in the microwave according to the package, then  add to the egg mix and stir.

In a 13×9 pan spread about 1/4 cup of spaghetti sauce on the bottom then lay down 3 of the no-boil noodles. These will expand when you cook them so space each one evenly.

Next, layer 1/2 of the egg mixture, sausage and then mozzarella cheese on top of the noodles. Cover with more spaghetti sauce, then repeat the layers. Sprinkle the remaining 1/4 cup of Parmesan cheese.

Cover with foil and cook in a pre-heated 375 degree oven for 25 minutes. Remove the foil, then return to the oven for about 5 minutes or until the cheese is browned on top. Let the dish sit for about 15 minutes before cutting and serving.

Looks pretty good, doesn’t it? It was delicious, and I love that the recipe uses cottage cheese instead of ricotta. Not only does it cost less, but it also has less fat! A few other dinners that we have enjoyed are Inside Out Stuffed Peppers, Dijon Lime Chicken, and Upside Down Pizza.     LOVE eMeals!! They saved my sanity (and possibly my marriage) a couple years ago when I went from cooking (or not) for just myself for a couple decades to figuring out how to cook for my new husband and 17 year old stepson. Every.Single.Day.!!!!! I own probably 30 cookbooks, but do you think I could find suitable meals in any of them? They always managed to call for some obscure expensive ingredient that I couldn’t find in this little town. EMeals uses NORMAL food (with a few interesting items occasionally), and consistently provides yummy results.

      I have quite the collection of cook books too! But I agree about the obscure ingredients, I love that about eMeals. I can always find (or even have on hand) the ingredients for their recipes. So far all the dinners we have made have been very yummy! -Monika
