Turkey Avocado Pita with Creamy Cilantro Dressing

As a work at home mom, it’s easy to “forget” to eat during the day when I’m trying to get as much work done before the kids come home from school. I try my best to have healthy foods and snacks available not only for my kids, but for me too! When it comes to lunch, I have a few favorite ingredients that I like to keep on hand so that I can always have an easy and wholesome lunch to make when in a hurry. One if those ingredients is Oscar Mayer Selects Natural lunch meat because it’s made with no artificial ingredients, and is minimally processed. I feel good about eating it, and serving it to my family!

Turkey Avocado Pita with Creamy Cilantro DressingThe sandwich that I’m sharing today is by far my favorite. The first time I made it, I actually was intending to make a salad. I dressed arugula with my favorite Creamy Cilantro Dressing but then realized that I had no other veggies for a salad. So I searched the fridge for something else to make and decided to stuff a pita with my dressed greens and a few other sandwich type ingredients. It was love at first bite!

Creamy Cilantro and Turkey Stuffed Pita

Sandwich Ingredients:

1 whole wheat pita bread

6-8 slices of Oscar Mayer Selects Natural Slow Roasted Turkey Breast

1/2 of a medium avocado

1/2c shredded Monterrey Jack cheese

1c arugula

Creamy Cilantro Dressing Ingredients: 

1T low-fat sour cream

1 1/2T chopped cilantro

1t apple cider vinegar

1t lime juice

salt & pepper to taste

Creamy Cilantro and Turkey Stuffed Pita

Mix your dressing ingredients together, then toss the arugula with 1 tablespoon of the dressing. The arugula has a bitter peppery flavor and the creaminess of the dressing helps to smooth it out.

Warm the pita in the microwave for about 15 seconds then cut it in half to help prevent the bread from cracking.

 Carefully open each half of the pita and layer your sandwich ingredients. Try not to overstuff the pita otherwise it will start to crack as you eat it and everything will fall out!

This recipe can make one or two servings, depending on how you serve it. You can have one half of the pita with a side of fruit or a small salad, or you can eat both halves as your meal. Either way, it’s still delicious!
