Cheesy Chicken Enchiladas

I love Mexican food and I have been in search of a good enchilada recipe for a long time. Every time I tell my husband that I’m making enchiladas he rolls his eyes. I can’t even count how many recipes I’ve tried but I’ve finally found one that I love! It’s actually from a Lawry’s seasoning packet. The first time I made it according to the package and it was good, but the next time I made few changes to make it even better!

Cheesy Chicken Enchiladas

Ingredients:

  • 8 small flour tortillas
  • Lawry’s Chimichurri Casserole seasoning packet
  • 1 lb cooked chicken, cubed
  • 1 cup water
  • 1 (15oz) can of diced tomatoes with chiles (undrained)
  • 1 1/2 cups of shredded Mexican cheese
  • Garnish: chopped green onions, sour cream, guacamole

Directions:

  1. Preheat the oven to 350 degrees.
  2. Mix water, seasoning packet and tomatoes. Measure 1 cup of the sauce and mix with chicken.
  3. Fill each tortilla with about 1/2 cup of the chicken mixture and sprinkle with a little cheese.
  4. Fold the tortilla and place in a 13×9 seam side down. Once all the tortillas are filled, pour the remaining sauce over them.
  5. Top enchiladas with remaining cheese.
  6. Bake for 15 minutes or until the cheese is melted.
  7. Sprinkle with chopped green onions and serve with sour cream and guacamole. (optional)

    I love both chicken and beef enchiladas. I haven’t made either in quite a while.
