Easy 5 Minute Salsa Recipe

My family and I have some sort of Mexican dish every week for dinner and I always make fresh pico de gallo to go with it. But chopping all of the ingredients takes time and sometimes I just want to snack on chips and salsa! So when I want a quick snack, I make this restaurant style salsa. It’s quick and easy, just 5 minutes, and I always have the ingredients on hand because my husband will eat a whole of bowl of this salsa all by himself!

Ingredients:

  • 14.5 oz can of diced tomatoes, drained
  • 1/2 bunch of fresh cilantro
  • juice of 1/2 lime
  • 2 garlic cloves, peeled
  • 1/2 a jalapeno, seeds and membrane removed
  • 1/4 of a small onion

Directions:

Cut off the stems of your cilantro just under the leaves, then add to a food processor. Drain the tomatoes slightly, don’t worry about removing all of the juice. Just drain as much as you can so the salsa isn’t too watery. Next, add the tomatoes to the food processor along with all of the other ingredients. Pulse the food processor a few times until all of the ingredients are chopped. Do not blend or process on full speed or you’ll end up with soup! Just a few short pulses will do the trick.
