Chocolate Yogurt Mousse Cups

During the Summer I’m always searching for yummy no bake desserts! It gets so hot here but I love dessert and don’t want to give it up. Even though ice cream is delicious I can’t eat it every night, so I switch up my sweet treat and often times eat yogurt instead. There are so many yummy flavors to choose from and eating yogurt instead also helps me to fit into my bathing suit all Summer. My most recent trial with a yogurt dessert was quite a success, especially with the kids! I had s’mores in mind when making it, but didn’t want to add my sticky marshmallows. I have to say, I am very happy with the end result!

Chocolate Yogurt Mousse Cups

Ingredients:

  • 1/2 c whipping cream
  • 2 tbsp cocoa powder
  • 2 (6oz) containers of Yoplait Original French Vanilla yogurts
  • 1 c graham cracker crumbs
  • 3 tbsp butter, melted
  • Whipped cream topping (optional)

You’ll also need glass jars, or cups to hold the dessert. I used pint size mason jar, but small juice glasses would work too.

Directions:

Mix graham cracker crumbs and melted butter until well combined, but still crumbly. You don’t want a thick paste.

Divide the graham mixture into the bottom of (4) jars or cups evenly. then press the mixture down to form your crust. Place the jars or cups in the refrigerator until you’re ready to fill them.

Whisk the whipping cream and cocoa powder together until all lumps are gone and the mixture starts to thicken. Then empty your Yoplait Original French Vanilla yogurts into the mixture and continue to whip until smooth.

Take the jars/cups out of the refrigerator and fill them evenly with the chocolate mixture. You can serve these immediately, or cover and save for later. I use the jars because I can put the lid on and save these to eat throughout the week.

You can also top your mousse with whipped cream topping, if you like. My kids always opt for whipped cream!

This recipe is perfect for Summer snacking, not only because it does not require baking but also because it’s light and refreshing on a hot day! Yoplait Yogurts are available in several varieties, such as Original, Light, Greek, Gogurt®, and are available at your local Walmart store.
