Marshmallow Jigglers

Over the holiday break I stumbled upon a recipe on the Kraft website called Marshmallow Pinwheels. It looked like such a fun a treat to make! I immediately went to the market to grab the ingredients – flavored gelatin and marshmallow. Well, my first try didn’t turn out any like the pictures, but it sure did taste good! So I tried it again, then  again and just one more time until I was 100% happy with the way it turned out.

Marshmallow Jigglers

Ingredients:

  • 3 oz package of flavored gelatin
  • 1/2 cup boiling water
  • 1 1/2 c mini marshmallows

Directions:

Empty the contains of the gelatin into a medium size bowl and pour to boiling water into the bowl. Stir until the gelatin is completely dissolved.

Add marshmallows and stir. Microwave for 20 second intervals, stirring in between until the marshmallows are completely dissolved.

Do not let the marshmallows over cook or they will dissolve into the gelatin. The mix should look creamy, not clear.

Spray a 8″ or 9″ square pan lightly with cooking spray, then pour the mixture into the pan.

Refrigerate for 45 minutes, or until the gelatin has set. Run a sharp knife around the edge then peel the gelatin mixture from one side place on a cutting board.

You can cut it into squares, or use a cookie cutter to make fun shapes! Be sure to refrigerate until ready to serve.

The kids love them! And they liked helping with cutting out the shapes too. My son picked stars, and my daughter picked hearts. We’ve tried a few different flavors so far – Mango, Fruit Punch, Strawberry, and Orange. My husband liked Mango the best, the kids liked Strawberry. But I liked the Orange, the flavor reminded me of a 50/50 bar. What flavor will you try?

Strawberry was my kids’ favorite too. It was hard to find fun flavors in the smaller 3oz packages, I had to keep an eye out when I was at different stores. But I was glad to find orange and mango, they were yummy! -Monika
