Easy Taco Cups
Weeknight dinners can sometimes be a challenge with busy families. If we have a lot going on and I’m short on time I often opt to make tacos because it’s such a quick and easy dinner. But having the same dish each week can get a little boring so I decided to try the same meal we love but with a twist! At first, I thought that these might not be enough of a meal even though I serve them with a side of beans, but they are actually quite filling. Two taco cups and a small serving of beans if more than enough for me! You can add any topping you like – pepper jack cheese, salsa, guacamole, etc. I hope you like this recipe and try it out for yourself!
