Ingredients

  • 2 cups old-fashioned oats
  • 1/4 cup coconut oil
  • 1/3 cup honey
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1 Tbsp ground flaxseed optional

Instructions

  • Preheat the oven to 300 degrees and line a baking sheet with foil or parchment paper. Don't use a silicone mat. I've tried it and it doesn't turn out as crunchy!
  • Combine all ingredients in a bowl until all of the ingredients are mixed thoroughly.
  • Next, spread the mixture evenly on your prepared pan.
  • Bake for 10 minutes, then remove the pan and stir up the mixture. Bake for another 10 minutes, or until golden brown.
  • Remove from the oven and allow the granola to cool completely before scooping it into your containers.

Notes

A few things, be sure to use old-fashioned oats. Quick oats will not turn out the same! I included flaxseed in the recipe to add omega-3 fats and fiber. It's optional and won't change the flavor if you leave it out. Lastly, if you mix in additional ingredients, you can add nuts before cooking but add any dried fruit after the granola is already baked.
