3 Ingredient Pumpkin Spice Muffins

I usually love to bake from scratch, but during this busy holiday season, I sometimes am short on time. I tried this recipe not expecting too much, but was pleasantly surprised at the results. I made them for my kids and their cousins and had everyone coming back for seconds. 

3 Ingredient Pumpkin Spice Muffins

You only need 3 ingredients for these muffins:

  • (1) box of yellow cake mix
  • (1) 15oz can of pumpkin puree 
  • 1 tsp pumpkin spice seasoning

Preheat your oven to 400 degrees. Then, mix all of your ingredients in a large bowl. Do not add the additional ingredients the boxed cake mix calls for. Just the powdered mix, pumpkin, and spices. The batter will be thick, but just mix until it’s all combined.

Next, add the mix to your muffin tin filling each cavity 1/2 full. I used a mini muffin tin with paper liners but a regular tin will work just fine. If you are not using liners, be sure to spray your pan with non-stick spray.

Now, bake your muffin for 6-8 minutes for mini muffins or 8-10 minutes for regular size muffins. Cool on a wire rack when done.

If you want to dust the muffins with powdered sugar, be sure to wait until they are completely cool or the sugar will melt. Enjoy!
